Welcome to the wonderous world of Bottled Culture ferments!

Fermented foods are the bubbling cauldron of culinary hype, and for good reason! These scrumptious creations, ranging from tangy kimchi to fizzy kefir, are packed with probiotics – the friendly bacteria that support digestion and overall health.

But what’s the fuss really about? First up, the fermentation process transforms simple ingredients into nutrient powerhouses. Fermentation can enhance the bioavailability of vitamins and minerals, making them easier for our bodies to absorb. Plus, they’re a fantastic source of antioxidants, helping to fend off those pesky free radicals.

Then there's the gut-brain connection. Studies suggest that a thriving microbiome, bolstered by fermented goodies, might reduce anxiety and improve mental clarity, even possibly influencing your mood. Who knew a spoonful of sauerkraut could be so powerful?

Let’s not forget the flavour explosion. Fermented foods add a zing that most ordinary food just doesn’t possess. From the tang of sour cabbage to the umami kick of kimchi, the taste alone can take your meals from drab to fab!

So, whether you’re slapping some kraut on your peanut butter toast or sneaking in a spoonful of kimchi with your sausages, the fuss over fermented foods is about more than just trendy Instagram pics. It’s a vibrant celebration of health, taste, and all the joy that comes with letting nature do its magical thing.

Check out our wonderfully eclectic range of ferments below, from the wild fermented veggies like our delicious krauts and spicy kimchis, to the ancient elixirs of traditionally brewed kombuchas and bubbly water kefir. Don't forget our gourmet cultured pesto and intriguingly zesty lime pickle! We put our hearts and souls into lovingly hand-making everything right here in our farm commercial kitchen where all the magic happens.

Kimchis

Kimchi is like a spicy, funky hug in a jar! Originating from Korea, it’s a fermented veggie feast, most commonly starring wombok and radishes dressed in a tantalising seasoning of gochugaru (that’s Korean chili powder, if you didn’t know), garlic, ginger, apple, and a splash of mushroom umami flavour.

Kimchi isn’t just food; it’s an experience, a culinary tradition that has been perfected over centuries. Whether nestled alongside rice, plopped into stews, or steeped into a spicy pancake, this pickled delight is all about the delightful dance between heat, sourness, and crunch.

This living brew is not just a thirst quencher; it’s a probiotic powerhouse packed with gut-friendly goodness. It comes in a range of flavours, from zesty ginger to fruity guava, so there’s sure to be something for everyone. Sauerkrauts

Sauerkraut is a tangy, fermented cabbage dish originating in China, but took root in Central and Eastern Europe with the word translating to “sour cabbage” in German. Made from finely shredded cabbage (and other veggies and spices) that's salted and left to ferment, it's a crunchy explosion of flavour and gut-loving goodness. The fermentation process gives sauerkraut its zesty bite along with a unique sour taste. Often enjoyed alongside sausages or in sandwiches, it’s a versatile companion on your plate.

Water kefir

Water kefir is a fizzy, probiotic-rich drink made by fermenting sugary water with friendly little critters called water kefir grains. These grains are a gelatinous mix of bacteria and yeast that transform the sugar water into a delicious sparkling beverage, with a hint of fruity or herbal flavour. It’s a natural soda that’s actually good for you!

Sourcing Ingredients

We would like to be growing 100% of the produce for our products but it’s hard to find the time to do everything! Since our garden was washed out a few years ago we are waiting to get the drainage fixed on our land before planting again.

We currently use mostly certified organic produce from farms across eastern Australia via the Sydney organic markets. A small portion of cabbages are grown by a local organic farmer near us, and the garlic we use is grown by an organic farmer about 100kms away. Unfortunately there are some items that are very difficult to source certified organic year round such as wombok (Chinese cabbage), so we are forced to use conventially grown wombok most of the year to continue making our kimchi. Our aim is to eventually have everything grown on farm or within 100km of our farm where possible!

We source the highest quality certified organic and natural dried ingredients from reputable Australian suppliers.
